when you talked about the restricted plugins and mp3 you presumed that the mp3 codec is propriety, it is not but it violates patents but generally the opinion is that patents are evil so should be ignored. flash is the main issue and anyone serious enough about freedom to go without flash won’t go with Ubuntu as it makes it possible to install proprietary software (from the repos)
just another comment, all of the stuff you were saying about the disk management (raid) the zfs filesystem does provide this functionality and is open source but only on (open) solaris and bsd (the is a project for it under fuse)
